meet the caramel flavors

What started with a classic recipe for caramels has opened to a world of exploration for me. As I seek new and exciting flavors to pair with my Poppa's recipe, I often find inspiration from ingredients around my kitchen and other recipes I find enjoyable. Here is a glimpse inside several of the many flavors we have worked to perfect:

classic sea salt This is the base to all of my caramel explorations. This is the recipe that I learned from my Poppa, and I have made it many times, each time paying closer attention to the details, to yield a smooth and sweet caramel that melts in your mouth and warms your soul. The caramelized sugars are paired sweetly with vanilla-bean extract that I handcraft with locally distilled vodka and vanilla beans brought back from Madagascar by a dear friend. The sweet vanilla and caramel are then balanced lightly with a sprinkle of sea salt, which rounds the flavors and makes for a delicious treat.  After the crisp fall days fade into winter, our fall spice caramels are replaced with gingerbread. Ginger brings a new warmth as the days grow colder and the nights even more so.

Made with coconut milk, crystallized ginger bits, and curry powder, each caramel carries a kick of spice and a smoothness of coconut cream.

A flavor so familiar to early nights after days of snowshoeing and skiing across the winter wonderland of Wisconsin in the wintertime.

Growing up, her recipe for chai was a special treat that we enjoyed with our visits and that eventually she shared with my dad who passed it on to me. Made with two types of black tea and a rich blend of spices, the chai spice caramels are a beautiful melding of my family's traditions.
